
An easy Brownie recipe is something everyone should have to whip out on a rainy day. Except it isn’t raining. We are social distancing. How is everyone coping? It is a challenging time for everyone I’m sure. I have the added worry (for lack of a better word) of being an Emergency Department Nurse and we are for sure setting into some unsettling times. Anyone reading the news apps or consuming social media content will have seen the devastating effects on China, Italy and Spain. We have one chance to stop Ireland from following in their footsteps. Yet I see gangs of teenagers, crowded beaches and queues for chip shops. I also see the astronomical work being done behind the scenes in our hospitals and this behavior is quite frankly a slap in the face. Shame on you and your lack of respect for others.

Social Distancing Is Hard..
but we are in it together. I swore I was going to keep my corner of the internet Covid-19 free. It is my happy place. Somewhere I can create nice pictures and talk about little things like lipstick. Somewhere I can share an easy brownie recipe but it has been on my mind all day. It’s hard. Being away from loved ones, juggling this working from home (i.e. me not having a breakdown because my new dining table is my husbands new office), the home schooling, the cooking and cleaning that comes with us being at home all day everyday, the preparations for 13 hour shifts and trying to make some content to go out to social media. Oh and my magazine copy (beauty ed RSVP Mag) deadline is fast approaching. I have the same worries as most of you.

Anxiety?
A year ago this would have sent me into a panic and anxiety filled hole. Now my thought process is much more streamlined and simple. I just deal with what is in front of me. One step at a time. And that is all any of you can do. People have a strong opinion on what bloggers/influencers should do at a time like this. Don’t post links, don’t encourage shopping, don’t act normal. We are all adults at the end of the day. You get to choose what you consume. I want to consume content that is light and allows me to escape. Trust me, no one is unaware of what is happening. Let people be. Look after yourself. Life is tough enough right now and I think we are all feeling it.

Easy Brownie Recipe
So, I suggest you breathe, turn on the oven and bake some brownies. Chocolate fixes everything. I have been using this one for years and love how you can vary it. This time I made mine with milk chocolate, white chocolate chips and raspberries. I sometimes make mine with dark chocolate and orange. You can make them however you like!
Ingredients:
- 2 cups milk chocolate
- 1/2 cup unsalted butter
- 1 + 1/2 cups caster sugar
- 4 eggs
- teaspoon salt
- seeds from vanilla pod
- 1 cup white chocolate chopped
- Start by melting your milk chocolate and butter in a bowl over a pan of hot water untill melted.
- Add the caster sugar a little at a time and mix untill all incorporated.
- Next the eggs, one at a time mixing thoroughly between each one.
- Add vanilla seeds (or vanilla extract) and salt.
- Sprinkle in the flour untill you have your final batter.
- Now is the time to customize. I added 1 cup chopped white chocolate and after pouring the batter into my brownie tin, I add the raspberries.
- Bake for 40 to 60 minutes at 180 degrees C. Check after 40 minutes and every 10 minutes there after by inserting a toothpick 2 inches from the side. It should come out clean!
- Allow to cool before cutting into squares.
