On the weekend I like to take a bit more time to make a late breakfast/brunch. These potato Cakes and Poached Eggs are so tasty and require a little bit of effort. I made these from left over mashed potatoes. Couldn’t be easier and delicious! They are slimming world friendly, gluten free and clean. Great alternative to bread if you are watching what you eat.
Quantity of mashed potatoes (I used left overs enough for two generous Cakes)
1 tub of Brady Family Smoked Torn Ham
2 fresh eggs
2: heat a non stick pan over a medium/high heat and fry your potato Cakes untill crisp and golden on both sides.
3: poach your eggs in a pot of simmering water with a dash of white wine vinegar and salt untill whites are set and yolks still runny.
4: serve the eggs on top of the cakes and enjoy! Easy easy!
